Blackberry Vinaigrette

I can’t even begin to tell you how awesome it is that I run into some amazing people who have created such amazing ingredients, right here in New Hampshire. I have been a regular customer of Celeste Oliva for a few years as their line of olive oils and vinegars is just absolutely amazing! My recent visit to the Made in NH Expo came with a list of booths that I simply HAD to visit. Big Dog Sauce Company was at the top of my list for a new company to try.

This recipe features Big Dog Sauce Company’s blackberry sauce and Celeste Oliva’s Koroneiki EVO into a fragrant and delicious vinaigrette for a garden-style caprese. Typically, a caprese would feature a balsamic reduction. However, given the fact that we like to experience new flavors and combinations, it did not take long to create this vinaigrette and it easily replaces a traditional balsamic reduction. We didn’t even miss it!


INGREDIENTS:

1/3 Cup Big Dog Sauce Company's Blackberry Sauce or your favorite sauce 1/4 Cup White Wine Vinegar 1/4 Cup Celeste Oliva's Koroneiki Ultra Premium Extra Virgin Olive Oil

1-2 TB Red Onion, finely diced 3/4 TB Ginger, finely minced 3/4 TB Garlic, finely minced 1/2 TB Dijon Mustard Kosher Salt, to taste Black Pepper, to taste


Quite simply, a mixing bowl and a sturdy whisk is needed. You will add all of your ingredients into a bowl and mix vigorously. The Dijon is crucial as it is the emulsifier in this dressing.


Whisk this for about five minutes or until it begins to thicken up. Taste test to determine if you want more seasoning in your vinaigrette.


This is definitely a versatile vinaigrette that can be used for salads, chicken, salmon, pork, and beef. I made this for a garden-style caprese and it totally rocked the taste buds!
