I could not stop salivating while recording the narration on the video. This was the most hilarious thing I have ever experienced because not only did the final product taste so damn good, but the fact that just watching my video was making my mouth water! This delicious sauce is sweet, and savory, with a touch of salt, and a nice smoky flavor, and the nice tangy attack to your mouth drove us so insane over the flavors that came out of this, I couldn't stop right there. In another upcoming post, I'm going to show you how you can take some of this and make a whole different sauce for other meals in another post. I'm using two amazing New Hampshire-made items in this: Cathedral Ledge Distillery's Fig Flavored Vodka, and Mad Russian Apothecary Raw Honey. To make this recipe the way it is intended, you need to consider a purchase from both companies, to achieve the flavors that are in this delicious sauce. If you cannot purchase the liquor due to current US State regulations, see if you can locate a fig-flavored vodka at your favorite liquor store (or as we call it, "the packie"!

INGREDIENTS:
12oz frozen cherries, thawed 12oz tomato paste 8oz apple cider vinegar 6oz Cathedral Ledge Distillery fig-flavored vodka 6oz Mad Russian Apothecary raw honey 6oz water 4oz cane sugar or light brown sugar 3 TB dried mint 1 TB granulated garlic 1 TB granulated onion
1 TB red pepper flakes (or more, your
Kosher salt & black pepper, to taste
1.) Into a high-powered blender, add all of your ingredients, except for the water and tomato paste.
2.) Blitz on high until you can almost no longer see any cherry skins remain. You want this as smooth as possible without overheating the motor.
3.) Set up a strainer over a bowl. Pour your blitzed cherry fig sauce into the strainer and work this through. This will help remove any cherry skins or small cherry pit fragments from your base.
4.) Into a medium pot on medium heat, add your blitzed cherry fig sauce. Stir continuously for ten minutes while the base comes up to temperature. It will start to bubble like lava.
5.) Add your tomato paste and water next. Whisk this together. If you need more water, just add 1-2oz at this point. Be careful with this solution as you whisk this. Make sure to scrape the sides and bottom so none of the base burns. Stir until most of the water has cooked off. This may take about five to ten minutes. Taste test this to determine if you want more spices added.
6.) Turn off the heat and move the sauce pot off the burner. Pour into a sealable container and let this cool before placing the lid on it.
7.) You can use this right away or refrigerate this.
This is great for your next BBQ, for use with smoked meats, and is excellent as a pizza sauce base for something creative and incredible.
