Tomato-Basil Chicken Sausage Bruschetta

North Country Smokehouse has a delicious "Tomato Basil Chicken Sausage" available that I really wanted to showcase something in the form of an appetizer, a brunch option, even a dinner option. I did not want the dish to be heavy. I am using a local blackberry sauce instead of the traditional balsamic vinegar. What we end up with is an absolutely delicious bruschetta and it bakes up extremely well! Use whatever local sauce you can find.

INGREDIENTS: 2 links - North Country Smokehouse Tomato Basil Chicken Sausage, sliced thin 4 - Sliced Bread of choice (Italian bread, ciabatta, sandwich bread cut lengthwise, etc) 1lb Mozzarella, shredded

1 Recipe - Big Dog Sauce Company's Blackberry Bruschetta Mix

Big Dog Sauce Company's Blackberry Sauce Olive oil Kosher Salt and Black Pepper, to taste

Oven - preheat to 375¯F/190°C


  1. Prep your ingredients ahead of time

  2. In a half-sheet tray, place your sliced breads

  3. Drizzle olive oil on your bread and dust with kosher salt and black pepper

  4. Next, place a light layer of mozzarella cheese on all of the sliced bread.

  5. Then, spoon on a small layer of your blackberry bruschetta mix on each sliced bread.

  6. Take your prepped chicken sausage and place on top. Allow space in between sausage rounds

  7. Lightly spoon on some blackberry sauce from the bottle, on top of the sausage. Option: add more mozzarella on top

  8. Set the timer for a minimum 17 minutes

  9. Check for doneness. Mozzarella should be niced and melted.

  10. Once out of the oven, garnish with fresh basil and shred some parmesan cheese on top.

Serve this as is or with a bowl of soup. This can be sliced up into appetizer quarters or in half as a small meal.



RECOMMENDATIONS: North Country Smoke House Vermont cheddar sausage, jalapeno cheddar sausage, whiskey fennel sausage. This will also work with poultry, pork, steak, seafood, on rice, with eggs, and with either fresh bread or garlic bread.
