Creamy Citrus Cabbage Salad

In the Fall, we are hitting it hard with grilling, smoking meats, and diving into all the great foods of the season. We often find that we don't want coleslaw with our BBQ food. Sometimes, we want something close to it, but maybe change it up a bit! Where we are a seasonal-driven demographic, the hearty vegetables are affordable. Farmstands are still bringing some amazing produce to the table for sale. So, why not take advantage? For this side dish, we are using Concord, NH's Celeste Oliva's Blood Orange olive oil. This brings a fusion of sweet and savory together in such a beautiful way. Where my dish has both vegetables and fruit, this fruited olive oil will bring so many flavors together and will certainly leave you wanting more.

A one-bowl salad mix with blood orange olive oil

INGREDIENTS:

16oz/453g Red or Green Cabbage, julienned

8oz/227g Carrots, julienned 4oz/113g Mayonnaise

4oz/118ml Apple Cider Vinegar 2oz/60ml Celeste Oliva Blood Orange olive oil

2 Granny Smith apples, julienned

1 TB Garlic, finely minced

1 TB Thyme, dried or fresh 1 TB Dill, dried or fresh Kosher Salt - to taste

Black Pepper - to taste



After rinsing and drying your produce, prepare all of your ingredients

1.)    Cabbage: Remove the wilted outer leaves that are less-desirable. Cut the cabbage into julienned strips. Add the cut cabbage to your mixing bowl.

2.)    Carrots: Peeling is optional. Cut the carrots into julienned strips. Add the carrot to your mixing bowl

3.)    Apples: Peeling is optional. Slice and cut into julienned strips. Add the apple to you your mixing bowl.

4.)    Garlic: With a garlic press or your knife, mince this down as much as possible.

5.)   Add your carrots, apples, garlic, and the rest of your ingredients into the bowl. Toss to coat and let this sit for about 30 minutes

7.)    You will start to see fluids at the bottom of the mixing bowl. This will be the natural moisture excreting from the vegetables and fruit. Mix this again and refrigerate for up to 30 minutes before serving, or overnight for best results. Before serving, give this a good toss.


This is a great side dish for BBQ, grilled/smoked foods, for a light salad course, and also makes a great condiment for burgers!
