There is something about the flavors of summer and autumn coming together. It is the best of seasonable warm days and cooler evenings coming together that gets me excited about seasonal transitions! In New England, we are seeing small pops of colorful foliage already. but I am just not ready to fully transition to Autumn.
This dressing features the beautiful maple flavors of New England in a maple dark balsamic vinegar from Celeste Oliva of Concord, NH. This is the very definition of summer, autumn, and New England all in one bottle. It is a very sippable vinegar. I have used this in marinades, BBQ sauce, dressing a caprese, and even drizzling on top of cream cheese for my bagel. This is surely the Queen of Versatility when it comes to balsamic!
You will not need a video to show you how to do this as it is so simple to do fast. It is easy to make and I think you will enjoy this one!
INGREDIENTS:
2/3 Cup Olive Oil 1/3 Cup Celeste Oliva Maple Dark Balsamic Vinegar 3-4 Mandarin or Clementine Oranges, freshly squeezed
1 Scallion Bunch, finely chopped 0.5oz Chives, finely chopped
1 1/2 TB Dijon Mustard
Kosher salt, to taste Black Pepper, to taste
This is a one-bowl dressing. Simply mix all ingredients together until you get a beautiful married vinaigrette. Use as is or split this in half. One half, you can add a little Greek yogurt or mayonnaise to make a creamy version.
This is great for salads, dipping bread, marinating meats, and also for topping plated steaks!
