Jalapeno Cheddar Flatbread

North Country Smokehouse has a delicious "Jalapeno cheddar" available that I really wanted to showcase something in the form of an appetizer, a brunch option, even a dinner option. This sausage does have some heat so it is important to slice a small piece, heat it up in a pan and cook this to taste-test. What we end up with is an absolutely delicious flatbread that has a little heat and it bakes up extremely well!

INGREDIENTS: 2 links - North Country Smokehouse Jalapeno Cheddar Sausage, halved, sliced thin 1 - Flatbread or bread of choice (Italian bread, ciabatta, sandwich bread cut lengthwise, etc) 8 oz Mexican cheese blend, shredded

4 oz Vegetables of choice, finely chopped, sauteed

1 Recipe - Big Dog Sauce Company's Mango-Habanero Pico de Gallo Mix

Big Dog Sauce Company's Mango Habanero sauce (for dressing) Olive oil Kosher Salt and Black Pepper, to taste

Cilantro garnish Scallion garnish

Oven - preheat to 375¯F/190°C


  1. Prep your ingredients ahead of time

  2. In a half-sheet tray, place your sliced breads

  3. Drizzle olive oil on your bread and dust with kosher salt and black pepper

  4. Lightly saute the vegetables you chose for this.

  5. First, lightly smear Big Dog Sauce's Mango Habanero sauce as a lightly coated base.

  6. Next, place a light layer of Mexican cheese on all of the surface area

  7. Then, spoon on a small layer of your Mango Habanero Pico de Gallo on your bread.

  8. Take your prepped jalapeno cheddar sausage and place on top. Allow space in between sausage rounds

  9. Spread out your chopped vegetables

  10. Add another thin layer of Mexican cheese on top Optional: Drizzle more Mango Habanero sauce directly on top

  11. Set the timer for a minimum 17 minutes

  12. Check for doneness. Cheese should be niced and melted.

  13. Once out of the oven, garnish with fresh cilantro and scallions on top.

Serve this as is or with a salad, and/or a bowl of soup. This can be sliced up into appetizer quarters or in half as a small meal.



RECOMMENDATIONS: North Country Smoke House Vermont cheddar sausage, jalapeno cheddar sausage, whiskey fennel sausage, all sausage types, all bacon types, all deli meats, etc. This will also work with poultry, pork, steak, seafood, on rice, with eggs, and with either fresh bread or garlic bread.
