There are no words to describe the addiction for goat-cheese that exists in this house. Even my husband never knew how crazy-good this could get. This cheese is something that is perfect as-is. It is perfect with so many different ingredients. To go with our freshly grilled garlic toast, this beautiful spread of goat-cheese-goodness just amplified everything to a level of crazy-good! You can pick and choose your own vegetables to go with this. Pretty much about everything will go with goat cheese!
INGREDIENTS: 12oz Goat cheese 2 TB Butter, salted 2 TB Parmesan, freshly grated 2 TB Cream or Half-and-Half 1 Lemon, zest only 1 tsp Garlic, minced 1/4 tsp Black pepper Into a mixer (or simply a bowl and spatula), mix up all of your ingredients together. If you feel the cheese mixture is still a little too crumbly, add another tablespoon of cream. The key is to have a spreadable consistency.
Store in an air-tight container and refrigerate. This should be good for about 5-7 days.
