Tantuni - Turkish Wraps

From Mersin City comes this absolutely fantastic street food that brings forth some amazing flavors all wrapped up in lavash. This features a boiled, salted meat that is grilled on a large round comal. In the middle, the meats are cooked and crisped up. To the side will be the large supply of boiled, salted meat and the vendor will be heating up the lavash on the comal and building the lavash wrap right there in front of you. Fresh onions, tomatoes, herbs, and sumac go on the lavash. Then the cooked meat from the comal is added. The vendor will tightly wrap your tantuni and send you on your way.


This tantuni is adapted for the home cook and will use some ingredients that may require going to a specialty shop that features Middle-Eastern/Persian ingredients. The spices are also found directly online as well, so no matter what, you can definitely get your hands on the ingredients!

INGREDIENTS:

1lb/453g Steak, your choice of cut, small diced

4 Garlic cloves, minced 2TB Za'atar, more to taste 1TB Onion Powder, more to taste 1/2 TB Coriander, more to taste 1/2 TB Cumin, more to taste

Kosher Salt, to taste

Olive oil


4 Roma Tomatoes, small diced 1 White Onion, small diced Flat Leaf Parsley, finely chopped, to taste Sumac, to taste


Lavash

Choice of lettuce

Minted Dark Cherry Bourbon Dressing recipe


  1. Prep your tomatoes, onions, herbs into as consistent cuts as possible.

  2. Add your sumac in small stages and mix well. You should start to see the onions absorbing some of the sumac and change to a light link color. Either set aside or refrigerate until needed

  3. Prep your steak and garlic together and mix well. Keep the tips as small and consistently cut as possible.

  4. Add your spices and mix well until all of the steak tips are evenly coated

  5. In a pan on medium-high heat, add a little olive oil and wait for it to get good and hot

  6. Add your steak tips and make sure you are tossing around continuously. You will cook this to your own liking.

  7. After about three minutes, taste test a steak tip to determine if you need more seasoning.

  8. Once the steak is cooked to your liking, turn off the heat. There will be natural juices in the pan. Do NOT discard this!

  9. Lay out your lavash and start layering your lettuce, your tomato-onion mixture, the steak tips, and then drizzle on some of the minted dark cherry bourbon dressing (separate recipe)
