UPDATES AND POTENTIALS

As I push to get all sorts of things accomplished in the next few days, I am forcing myself to sit for a minute and just drop some thoughts here. Since November 9th, 2025, I have been dealing with a severe concussion that resulted in a traumatic brain injury. Fighting with medical doctors, rejecting their push to take prescription meds when Im already dealing with the harsh effects of my damaged brain. I survived one brain injury without medications. I would fucking think I would know better with the second time around that I don't want to be a walking zombie any more than I already was.


For multiple months, it has been a struggle to give focus to anything, especially launching Konky's. The brain injury was so severe that everything in my life had to be put on hold while I rehabilitated. My eye injury continues to be a challenge as well. Im not ready to go blind, ok? Hopefully though, we can get that rectified.


As I move forward and have felt well enough to 'function', I have made some connections with a local commercially licensed kitchen. They seemed very welcoming to have me come in and meet with them. Seeing as how I wanted to help put them in a good position for other commissary businesses, I donated my time to help give them a deep clean as well as find anything that might need attention (which was SOOO VERY LITTLE! Definitely refreshing to see!). Met with members, a few board-members, and some of the locals. Along came the lease agreement and then...


As of 02/20/2026 - I have OFFICIALLY filed my Health Department paperwork! Part of the conundrum is the waiting period and the need for inspections. Once that gets completed, it's chase different offices downtown to get sign-offs, and send that to the Health Department as well. Once I am secured and identified as green-lit to go, I will then need to file for my liquor license, to which some of my recipes calling for wine, whisky/whiskey, vodka, gin, and other spirits will be put on hold until I have the approval in hand. Slowly, but surely, things are falling into place where they belong so far. (knock on wood)
