COMIN' IN HOT!!!!!!!

Well, we are nearing certain goals being completed. Had a very productive meeting with the kitchen owner today that gave some good updates about the kitchen, about where we are at. I just learned that for the kitchen's fire inspection, they were approved. That means when it comes time for my inspection, that should be a fairly easy approval right then and there. Up next is to submit a brand new floor plan with my paperwork to the Health Dept. We have a brand new two-door commercial refrigerator in place that will put everything in the right direction. Meanwhile, we are still purchasing equipment and smallwares for the trailer. Man, I have had such a huge inventory collected that I had to go out and get a storage trailer just so I could see my dining room table again! LOL! That will be my newest project as everything we have purchased so far, will need to go into storage for the time being. Pretty soon, I will have a commercial-grade oven and table for sale. Originally, we needed one, but this ended up being way too small. I'm aiming to have full baking capability on this trailer, in addition to cooking equipment. There will also more than likely be a large prep table for sale that we thought we needed. Found something much more appropriate for a moving kitchen trailer that will be much more useful. Food labels are already printed for my spice rubs. Massive stock of containers and sealing rings is on hand. Pretty soon, it is security racks are going over, getting filled with my dry goods, equipment, and knives... Folks - it's coming.... Comin' in hot!
